<p><P>PROBLEM TO BE SOLVED: To provide non-reductive disaccharide fructofuranoside derivatives promising as food additives and an efficient method for producing the fructofuranoside derivatives including the same. <P>SOLUTION: This non-reductive disaccharide-containing fructofuranoside is obtained in a good efficiency under a moderate condition by reacting a fructofuranosyl acylate derivatives in which the hydrogen of hydroxy group at an anomeric position of the fructofuranose, with an alcohol in the presence of a perfluoroalkylsulfonic acid metal salt. The obtained non-reductive disaccharide fructofuranoside derivatives are expected to have useful functions as the functional food additives by de-protecting the protecting groups of the hydroxy groups. <P>COPYRIGHT: (C)2007,JPO&INPIT</p> |
