PROBLEM TO BE SOLVED: To provide a method for safely and easily producing an anhyrosugar in high yield from e.g. monosaccharide, oligosaccharide or their glycoside, polysaccharide or their mixture. SOLUTION: The method for producing the anhyrosugar(s) of the general formula(1), the general formula(2) and/or the general formula(3) comprises using, as feedstock, at least one water-soluble saccharide compound selected from monosaccharide, oligosaccharide or their glycoside, polysaccharide and their mixture, and heating the aqueous solution of the saccharide compound(s) solely without addition of additive(s) such as a catalyst at all.
