摘要 <P>PROBLEM TO BE SOLVED: To provide an enzymatic decomposition product of sake lees obtained by treating at least one of sake lees and white liquor lees with a multiple number of enzymes under pressurization and heating, and having at least any of an estrogen like activity, epidermal cornifying cell proliferation activity and humectant effect, a method for producing the enzymatic decomposition product of the sake lees and a functional material. <P>SOLUTION: This enzymatic decomposition product of sake lees obtained by treating at least one of the sake lees and white liquor lees with &ge;2 kinds of enzymes having different substrate specificities and reaction rates with each other under pressurization and heating. The enzymes are preferably at least any of a glycolytic enzyme and protease.
