A method of controlling a heater of an electric oven is provided to more rapidly control the heater of the electric oven depending on temperature variation of an oven chamber. A method of controlling a heater of an electric oven includes the steps of continuously driving an electric heater to pre-heat an oven chamber to a predetermined temperature(t0)(S11), setting a heater on time as a predetermined initial value(P1) to drive the heater depending on the on time(P1) during a predetermined number of periods(N)(S21), and comparing the calculated periodical average temperature with the latest period(T) and the previous period(T-1) to vary the heater on time depending on temperature variation, and drive the heater depending on the varied on-period(S35). During the pre-heating step, when the temperature in the oven chamber arrives at the predetermined temperature(t0), the heater is off for a predetermined time.
