COMPOSITION COMPRISING CYCLIC INULOOLIGOSACCHARIDE AND DIFRUCTOSE DIANHYDRIDE

PROBLEM TO BE SOLVED: To provide a saccharide composition having high contents of a cyclic inulooligosaccharide and DFA (a difructose dianhydride) and to provide a method for efficiently producing the saccharide composition.

SOLUTION: The saccharide composition comprising the cyclic inulooligosaccharide and DFA at high concentrations is obtained as follows. Inulin is reacted with an enzyme producing the cyclic inulooligosaccharide or a microorganism producing the enzyme to provide a reaction solution. The resultant solution is then reacted with an enzyme producing the DFA or a microorganism producing the enzyme.
