摘要 <P>PROBLEM TO BE SOLVED: To provide a soy sauce of smooth mouth touch with intense smell of ripe feeling and slight saltiness and harshness. <P>SOLUTION: A method for producing the soy sauce with improved flavor is provided, comprising loading soy sauce in a western liquor barrel and leaving the soy sauce to stand (storing it). A method for improving the flavor of soy sauce is also provided, comprising loading the soy sauce in a western liquor barrel and leaving the soy sauce to stand (storing it) to effect ripening.
