<P>PROBLEM TO BE SOLVED: To provide a soy sauce of smooth mouth touch with intense smell of ripe feeling and slight saltiness and harshness. <P>SOLUTION: A method for producing the soy sauce with improved flavor is provided, comprising loading soy sauce in a western liquor barrel and leaving the soy sauce to stand (storing it). A method for improving the flavor of soy sauce is also provided, comprising loading the soy sauce in a western liquor barrel and leaving the soy sauce to stand (storing it) to effect ripening. Thereby, the objective soy sauce with less unripe odor than conventional soy sauces, with flavor of ripe feeling, reduced in harshness and saltiness and improved in palatability can be obtained. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
