<P>PROBLEM TO BE SOLVED: To provide a method for producing a soup stock, by which the flavor ingredients and taste ingredients of the soup stock can be extracted from stock raw materials in extremely high efficiency and in good balance. <P>SOLUTION: This method for producing the soup stock, comprising extracting the taste ingredients from the stock raw materials with salt, is characterized by charging the stock raw materials to an extraction liquid and then charging the salt from 15 min before the separation of the soup stock from the stock raw materials to a time just before the separation. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
