PURPOSE:Sucrose palmitate of a specific HLB is added as a crystal growth inhibitor to improve the texture of oil products. CONSTITUTION:A sucrose fatty acid ester mixture containing the palmitate of 5 or less HLB is used as a crystal growth inhibitor for fat and oil. The palmitic acid content is preferably 60% or more in the sucrose fatty acid esters. The amount of the crystal growth inhibitor used is about 0.1-5wt% based on the oil, calculated as sucrose palmitate. |
