PURPOSE:To obtain a gelatinous food having chelating agent resistance, heat infusibility and hot water insolubility, by adding hot water to a blend of sodium alginate powder, milk, powder of milk or such and a gelatinizing agent to give a solution, packing the solution into a mold and cooling. CONSTITUTION:Hot water is added to a blend of sodium alginate powder, a calcium salt of organic acid, milk and a dairy product and the blend is kept at >=70 deg.C to give an aqueous solution. If necessary, a food (grain, potato or such, etc.) is added to the solution. The solution is packed into a mold, cooled and gelatinized. The calcium salt of organic acid is preferably a salt of alginic acid, citric acid, tartaric acid or glycine and calcium carbonate or calcium hydroxide. |
