PURPOSE:The titled tasty dried product, containing sugar, soluble polysaccharide, oil and lecithin in a specific proportion, having strong sweetness and flavor, good sense of eating and crispiness even after reconstituting with hot water as well as improved preservation quality. CONSTITUTION:A dried sweet corn kernel product containing 25-50% sugar, 1-25% soluble polysaccharide, 6-30% oil and 0.1-0.6% lecithin. For example, the above-mentioned material can be obtained by harvesting raw material corn grains in a relatively unripe state, preferably 73-78% grain moisture content in an earlier period than normal, drying the harvested corn grains, preferably by a freeze drying method and coating the dried corn grains with a fat or oil containing an antioxidant, e.g. lecithin, etc., to adjust oil and lecithin. |
