PURPOSE:To recover and reutilize agarase, improve yield of the subject oligosaccharide of good quality and reduce cost thereof by hydrolyzing an agar-containing substance with agarase and treating the resultant reaction solution with an ultrafiltration membrane. CONSTITUTION:An agar-containing substance is hydrolyzed with agarase to form an agar oligosaccharide and the resultant reaction solution is then treated with an ultrafiltration membrane to afford the objective oligosaccharide. Furthermore, the agarase is preferably used by a method for, e.g., regulating the substance to 40-70 deg.C temperature and pH 4-9, adding the agarase in an amount of 0.1-5 units based on 1g agar and reacting the agarase therewith for 10min-5hr. |
