The invention relates to a method for obtaining fruit and/or vegetable concentrates and installation for implementing this method. According to this method, the washed, ground and heated raw material is homogenised in a homogeniser (viscoliser) 3, with the possibility of heating-up, the pulp obtained is divided in a three-phase screw centrifuge with precipitation 6 into three fractions: clear juice, pasty cellulosic mass and waste, the pasty cellulosic mass is mixed and homogenised in a mixer/homogeniser (viscoliser) 9, with the concentrate obtained in a reverse osmosis device 13 where the clear juice is treated and the polluted water resulting from washing the raw material is centrifuged in a device 21 for separating the solid residues, the resulting purified water being returned for washing the raw material. <IMAGE> |
