Device making it possible to construct, for fermentation and baking, sandwich loaf tins with a large volume greater than thirty litres with evenness of the crumb during fermentation and baking without shrinkage or compacting after cooling the baked loaf. A closed metal framework "1" acts as a chassis for the mould. Two lids "2" and "3" close the box structure. Fasteners "4" immobilise the lids "2" and "3" on the metal framework. Two rigid grids "5" are positioned at the top and the bottom in the box structure and embed in the crust of the loaf during baking, thus preventing the loaf from shrinking after baking. A follower plate "6" regulates the development of the dough during fermentation by means of the action of gauge "depth" rods "7" and preloadable springs "8". Valves "9" regulate the pressure of the gases in the box structure during baking. The invention may be used for any industrial manufacture and production of sandwich loaves or plain food grade cake. <IMAGE>
