PURPOSE:To hygieniforcally and massively prepare a covered rice product having a good flavor by an automatical process comprising covering the surface of a rice ball molded into a desired shape with a water-absorbing and thermally coagulating powdery material, coating the product with a bather solution, steaming, heating in an edible oil, spraying with a seasoning solution and subsequently irradiating with microwaves. CONSTITUTION:The surface of a desired rice ball molded with a known cooked rice-molding machine is covered with a powdery material such as albumen or protein separated from soybean, coated with a batter solution by the use of a battering machine, steamed for a short time and further heating in an edible oil with a frier, etc. The product is preferably subjected to the first heating process at a relatively low temperature to expand the cover, immediately cooled to shrink the cover and subsequently subjected to the second heating process at a high temperature to arrange the appearance of the product. The product is, if desired, sprayed with a seasoning solution. The above-mentioned processes are integrated and, if necessary, further combined with a micro wave irradiation process for a perfect automation process. |
