摘要 |
PURPOSE:To obtain the subject snack material capable of sufficient puffing by irradiation of a domestic microwave and capable of ready processing for obtaining an excellent mouth feeling by coating a processed starch dough containing water in a specified ratio with a gum substance layer. CONSTITUTION:A steamed and kneaded starch dough (e.g. one prepared from grain starch and/or rhizome starch) containing 12-14wt.% water is formed into a prescribed shape and coated with an edible gum substance layer to obtain the objective snack material. The resultant snack material is subjected to irradiation of 2400-3000MHz for 1-2min, e.g. using a domestic oven. |
