A method for initial processing of fruit and vegetables intended for pre-cooling and freezing which consists in sorting, sizing, cleaning and rinsing or washing them, characterised in that raw material is stimulated with an electric current of 100 V <= U <= 300 V voltage, of half sine, sine, square or triangle wave, of 60% sinusoid saturation, field frequency of 50 Hz <= f <= 2 MHz, current intensity of 50 mA <= J <= 700 mA, within the timeframe of 60 s <= tEs <= 120 s, and then it is submitted to further processing carried out according to the known methods.
