A probe for measuring the temperature of a gas flow is of the type comprising at least one convergent-divergent means (126, 124) defining a neck (128) and in which a part of the flow is caused to circulate, and at least one thermocouple (152, 154; 152', 154') placed in the convergent-divergent means. According to the invention, the or each thermocouple comprises a weld from which two conductors (152, 152'; 154, 154') of different natures extend in opposite directions, and the or each thermocouple is embedded (flush-fitted) at its two ends perpendicularly to the axis of the gas flow. Application in particular to measurements of temperature at the output of the compressor in aircraft engines. <IMAGE>
