The invention relates to a method for producing a food product which comprises a filling which is wound inside a casing by successively placing a metered filling approximately in the centre of a sheet-like casing, folding two opposite sides of the casing towards one another over the filling in a first direction, folding a third side of the casing around the filling and the folded sides in a direction which is transverse with respect to the first folding direction, and winding the remaining part of the casing around the filling and the sides which have already been folded. The invention also relates to an assembly for producing a filling comprising a food product which is wound inside a casing, which assembly is provided with a device for metering and positioning a filling on a sheet-like casing, a first device, which is positioned in series with the metering device, for folding two opposite sides of the casing towards one another in a first direction, a second device, which is placed in series with the first folding device, for folding a third side of the casing in a direction which is transverse with respect to the first folding direction, and a device, which is placed in series with the second folding device, for winding the filling and the sides which have already been folded into the remaining part of the casing.
