摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing raw boiled noodles, capable of offering a noodle product at a low cost through simplifying a production process and making a production cost low, and taking the health of consumers who taste boiled noodles into consideration. <P>SOLUTION: This method for producing the raw boiled noodles comprises a process of forming noodle strips through pushing while kneading with a screw in a vacuum condition, a noodle material stirred while adding water, a process of rolling the noodle strips to one noodle strip passing through a rolling process with a roll, a process of cutting the rolled noodle strip to a unit quantity to make noodle ribbons in a raw noodle condition, and a process of boiling up the noodle ribbons in a time about half of an ordinary boiling time which is calculated from a mixture of a noodle material comprising noodle ribbons and a thickness of noodle ribbons. Furthermore, the method comprises a process of keeping the high temperature noodle ribbons just after boiling in a sealed condition followed by putting the sealed space into an almost saturated steam condition, a process of gradually cooling the noodle ribbons kept in a sealed condition, and during the time, ripening the noodle ribbons, and at the same time, pregelatinizing to the core part of the noodle ribbons, and a process of cooling and freezing the noodle ribbons which are gradually cooled and ripened. <P>COPYRIGHT: (C)2009,JPO&INPIT
