Provided is a baked cake which can be sufficiently shaped even in the case of using an oligosaccharide having physiological functions such as decay resistance, an effect of promoting the growth of bifidobacteria, an effect of improving the metabolism of lipids such as cholesterol, an immunomodulating effect and an effect of inhibiting a rise in blood sugar level and can be produced on an industrial scale. A baked cake which comprises wheat flour, saccharides including 1-kestose and fats including a moisture-containing fat, and a method of producing the same.
