A method for preparing raw materials for rice bran fermented foods is provided to ferment foods by using lactobacillus fermentum KCCM 10499, thereby enabling the lactobacillus to reach intestines. A method for preparing raw materials for rice bran fermented foods comprises the following steps of: spraying 4-10 parts of water to 10 parts of rice bran with moisture content of 11-13% while stirring until the rice bran has 37-55% of moisture; putting the rice bran into a pressure vessel and steaming at 1.1~1.9bar for 1~2 hours; leaving the steamed rice bran as it is in a clean room of room temperature for 1-3 hours until it is cooled off to 50-70°C; inoculating 0.2-0.5 part of lactobacillus fermentum powder to 10 parts of rice bran and mixing them; fermenting the inoculated rice bran in a fermentor under the condition of 42~46°C and humidity of 75~90% for 36-48 hours; and drying until the moisture content becomes 4-7%. |
