A method for manufacturing method of the anchovy liquid jeot or jeotgal is provided to remove the heavy metals contained in bay salt by using a garlic and the bamboo salt. A method for manufacturing method of the anchovy liquid jeot or jeotgal comprises the steps of (S10) washing anchovy and removing water; (S20) mixing 55~75 weight% of the dehydrated anchovy, 1~5 weight% of the freeze-dried garlic powder and 25~40 weight% of the bamboo salt; (S30) sealing the container containing the salted anchovy and fermenting it in a cold place for 12~18 months; and (S40) precipitating the fermented anchovy, and extracting the clean liquid floating. |
