<p>The method for preparing wort during the production of beer, comprises heating and atmospheric-cooking the wort in a wort pan (1) at a temperature concisely lying below the boiling temperature for a time period of 15-20 minutes, holding the heat of the wort in the wort pan at the given temperature for the time period of 40-50 minutes, transferring the wort into a whirl-pool (2) and an evaporation vessel (3), partitioning the wort into thin wort films within the evaporation vessel, and transferring the wort from the evaporation vessel into a wort cooler (4). The heat-holding step and the cooking step are alternatively carried out in a small period of time. The evaporation of the wort is carried out in the wort pan. The partitioning of the wort is carried out by a ring (5), which is provided along its periphery with equidistantly arranged injection nozzles (6) and bores and is fastened at outer and inner periphery of the evaporation vessel, by injection nozzle guided through a side wall of the evaporation vessel, by an overflow channel fastened at the inner periphery of the evaporation vessel, and by individual pipelines. Different partial surfaces of the side wall of the evaporation vessel are wetted with the wort by injecting the wort from the injection nozzles in a fan-shaped manner. An independent claim is included for a device for preparing wort during the production of beer.</p> |
