PROCESS FOR PRODUCING HIGHLY PURIFIED ORANGE ROUGHY OIL

A simpler and efficient process for producing a highly purified orange roughy oil having high storage stability. The process is for producing a highly purified orange roughy oil which contains substantially no highly unsaturated fatty acid esters having 4-6 double bonds and which has a saponification value of 98-113 and an iodine value of 73-89. The process comprises: a step in which a raw orange roughy oil is washed with an aqueous alkali solution to remove free fatty acids; a step in which hydrogenation is conducted with the aid of a catalyst to reduce highly unsaturated fatty acid esters; and a step in which the resultant oil is purified by an adsorbent treatment.
