A device for removing the kneecap from deboned poultry meat comprising of an elongated plunger and an elongated hollow casing having a first and second opening into which the plunger fits such that there is a gap between the plunger and the inner surface of said casing. The invention further provides an apparatus employing said device and method for poultry meat kneecap removal.
