[Class 2 (iii)] A zein solution is treated with a hydrocarbon solvent (benzene or toluene) of maize oil and colouring matter and the mixture is allowed to stand until it separates into two liquid layers. The light supernatent layer, containing the oil and most of the zein solvent and oil solvent is removed from the heavier layer containing most of the zein and some of the zein solvent and oil solvent and this heavier liquid is subjected to a distilling operation, under a pressure reduced sufficiently to prevent denaturing of the zein, whereby substantially all of the oil solvent is removed. , The heavier liquid may be diluted with additional zein solvent (alcohol) before the distilling operation or it may be subjected during distillation to the action of alcohol vapours. The water content of the purified solution may be reduced by adding benzene during the distilling operation. The zein solution used may be obtained by extracting gluten meal with aqueous ethyl alcohol as described in Specification 492,599, and the extract may be clarified by the process of Specification 515,999.
