Provided is a method for preparing rice wine made from Lespedeza cuneata by extracting useful ingredients included in the Lespedeza cuneata. A method for preparing rice wine made from Lespedeza cuneata comprises the following steps of: primarily steaming rice to prepare hard-boiled rice; inputting spawn to the prepared hard-boiled rice to make rice yeast; pouring water to the rice yeast and primarily fermenting the rice yeast to prepare crude liquor; secondarily fermenting the hard-boiled rice with crude liquor and adding water to the mixture to prepare Suldut(steamed rice used for brewing rice wine); drying roots and stems of Lespedeza cuneata; pulverizing the dried Lespedeza cuneata in 0.05-1mm size; and inputting 5-15wt% of the Lespedeza cuneata powder to the Suldut and fermenting the mixture for 5 days. |
