摘要 <P>PROBLEM TO BE SOLVED: To provide a food material having refreshing bitter taste and rich roast flavor. <P>SOLUTION: Wheat as the food material is roasted so as to bring a decreasing rate of baking to a range of 3.5 mass%-12.0 mass%. Alternatively, the wheat is roasted after peeling &ge;4 mass% so as to bring a decreasing rate of baking to a range of 3.5 mass%-12.0 mass%.
