PURPOSE: A duck grilling method is provided to prevent the loss of gravy and main gradients including ginseng or red ginseng extract and oil. CONSTITUTION: Hair, internal organs, head, feet of a duck are removed and cleaned(S10). The duck is matured by immersing ginseng concentrate made of ginseng or red ginseng into diluted water(S20,S30). An oil coating film is formed on the surface of the duck by using grain including an oil elements as a fuel(S40). The grain with oil elements is corn kernel, bean, peanut or sesames. The cleaned duck is immersed into loess solutions after a cleaning process. |
