<P>PROBLEM TO BE SOLVED: To provide a method for producing a high-concentration sucrose liquid sugar, which suppresses precipitation of sucrose crystal in a high-concentration sucrose liquid sugar and prevents multiplication of microorganisms, etc. <P>SOLUTION: In the method for producing a high-concentration sucrose liquid sugar comprising 20-27 wt.% of water and a sucrose-containing solid content, a sucrose-containing solution is mixed with fructooligosaccharide so as to have 10-20 wt.% of fructooligosaccharide in the solid content. The fructooligosaccharide is added to a brown liquor obtained by washing of a raw material crude saccharide, dissolution, saturation with carbonic acid and purification. Alternately, a raw material crude saccharide is washed, dissolved, saturated with carbonic acid, purified to give a brown liquor as a raw material, which is mixed with an enzyme agent containing fructosyltransferase to form fructooligosaccharide. <P>COPYRIGHT: (C)2010,JPO&INPIT |
