FIELD: food industry. ^ SUBSTANCE: invention refers to a manufacturing technique of coffee substitutes. It involves preparation of scorzonera, cutting and drying in the microwave field to residual humidity approximately 20 % at microwave field power to ensure scorzonera heating to inside temperature 80-90C for at least 1 hour, and roasting. Acorns are roasted. Scorzonera and arcons are mixed in the mass ratio 1:1, and cryogrinding of the prepared mixture in the liquid nitrogen medium follows. ^ EFFECT: offered method allows to prepare a new coffee beverage of alternative raw materials with applying a non-waste technology. |
