The invention relates to a fruit stone separator that can operate as an independent device or as a component of a complex installation intended for separating stone of fruits (cherries, sour cherries, wax cherries, plums, apricots, peaches) with a view to preparing food industry products. According to the invention, the fruit stone separator comprises an underframe (A) on which there are mounted a rubber drum (1) and a metal discs drum (2) rotating in opposite directions, above said drums (1 and 2) there being provided a gate shear (3) driven by a crank mechanism (4) pushing the fruit towards a stone separating plate (5) which directs the stones to a trough (B) and the fruit pulp to a slope (C), the separator being provided with a mechanism (6) for adjusting the position of the rubber drum (1) as against the metal discs drum (2) and with a device (7) for adjusting the position of the stone separating plate (5) as against the two drums (1 and 2). The stone separating plate (5) is beveled on its face which is in contact with the fruit, having an active edge (H) on which there are cut several pyramid-shaped cells (M) spaced apart from one another at a certain distance (d), the intersection between the active face (S) of the separating plate (5) and the pyramid-shaped cells (M) resulting in a serrated profile of the active edge (H).
