PURPOSE: A producing method of kimchi using a soybean meal extract is provided to use the soybean meal extract obtained by inserting water with the pH of 4.0~5.5 into soybean. CONSTITUTION: A producing method of kimchi using a soybean meal extract is capable of performing an aging process in short time. A producing method of kimchi comprises a step of adding 0.5~3wt% of soybean meal extract to conventional kimchi. 1part of soybean by weight is mixed with 15~25parts of water by weight to obtain the soybean meal extract. |
