The method involves installing a conditioning system at top of a container (1), where the conditioning system comprises an injection crown (2) e.g. circular crown, matched with an upper part of outer walls of the container. The container is filled with a product. A lid (3) in a stand-by position is installed on a blocking system i.e. retractable stop (5), of the crown. Required controlled atmosphere is set in space (6) of a head (7) of the container by gas injection. The gas injection is stopped to close the container by pressure on the lid so as to force the blocking system of the crown. An independent claim is also included for a device for conditioning a product in a container hermetically closed by a lid, under controlled atmosphere.
