The method involves containing truffles in a perforated basket (4) that is integrated via a rod (8) and a gear (9) with a motor (10), where the motor assures rotation of the basket with respect to an insulated vessel (3). The truffles are subjected to wave impacts propagated in liquid surrounding the truffles from a pallet (12) that is mechanically connected to a high frequency actuator (11). The vessel is closed by a lid (5) made of insulating material. The vessel is pierced with two openings (6, 7) for allowing passage of the rod.
