The method involves forming two cuts (TC1, TC1-1) on top of a head of a lettuce to separate non-consumable ends (P1). Third and fourth cuts (TC2, TC2-1) are formed in a cylindrical manner for collecting an outer peripheral layer and a top layer as a semi-finished consumable (P2). A fifth cut (TC3) is formed for collecting an inner periphery as another semi-finished consumable that is distinct from the former consumable. A sixth cut is formed horizontally on a remainder of the fifth cut to separate a core (P4) of the lettuce that is distinct from the former consumable and the latter consumable. An independent claim is also included for an installation for selective industrial peeling of lettuce heads by cutting in a suspended state.
