<p>The present invention relates to a liquid flavor capsulation composition which has excellent high-temperature stability in which cyclodextrin syrup or hydroxypropyl methylcellulose and gum ghatti are mixed, a liquid flavor composition comprising the same, and a method for preparing the same. The liquid flavor capsulation or liquid flavor composition of the present invention can be used in the manufacture of processed food, functional health food, medicaments, etc., and in particular, can be used to give high-temperature stability to a flavor which is easily volatilized or denatured in the process of heating and cooking food.</p> |
