PROBLEM TO BE SOLVED: To provide gelatinous food having unique texture which has not existed as yet and suitable for a snack or the like by using heat coagulable &bgr;-1,3-glucan, and to provide a manufacturing method of the gelatinous food.SOLUTION: There is provided gelatinous food having specific gravity of 0.4 to 1.0 obtained by gelling and expanding a base material containing heat coagulable &bgr;-1,3-glucan and water. The gelatinous food can be obtained by preparing the base material by mixing a raw material containing heat coagulable &bgr;-1,3-glucan and water, heating the base material by microwave heating or Joule heating and gelling or expanding to have specific gravity of 0.4 to 1.0. |
