PROBLEM TO BE SOLVED: To provide a processed food of myoglobin-containing red-fleshed fish meat for eating raw, having a further improved appearance and texture in comparison with conventional ones; and a manufacturing method thereof.SOLUTION: The processed food of myoglobin-containing red-fleshed fish meat for eating raw includes a mixture of granular portions and pasty portions. The proportion of the total area of the granular portions measured by image analysis of the processed food is 5% or more and 50% or less, with a variation coefficient of grain diameter in the granular portions (CV value) of 70% or more and 190% or less. Further, the proportion of the total of reddish hues in the hue measurement by image analysis of the processed food is 12% or more and 60% or less. |
