PROBLEM TO BE SOLVED: To provide a method, in a soybean curd as a food material usable on general purpose, capable of reinforcing dietary fiber by a simple method.SOLUTION: Water-soluble dietary fiber is dispersed into oil so as to be added thereto, by which the dietary fiber of a soybean curd can be easily reinforced. Further, by jointly using transglutaminase treatment, its texture can be improved. |
