[Class 28 (i)] Foodstuffs in a loose condition are treated with steam or hot air issuing at high velocity from nozzles at a distance from the food. Steam may be delivered by a fan 7, Fig. 1, to a chamber 3 having nozzles 4 above the food on a tray 5, and may be returned by a pipe 7 to the fan. In the case of hot air treatment, heating coils 18 or a resistance heater may be provided in the chamber 3 to heat the air, which takes up moisture from the food and becomes steam laden. The food may be treated as it descends a sloping chute, or it may be moved on a conveyer 13, Fig. 3, passing between a steam chest 15 with pressure nozzles 14 and an exhaust chest 17 with suction nozzles 16. |
