摘要 The present invention relates to a method of determining oxidation stability of lipids in samples of muscle tissue, wherein the method is characterized in that first a muscle tissue sample is homogenized, then extracted with an aqueous solution of trichloroacetic acid, followed by filtration of the sample extract through a paper and a membrane filter, then a clarified extract is reacted with a solution of thiobarbituric acid to form a colored complex when heated in a water bath at 100 degC, and the so formed colored complex is spectrophotometrically analyzed against the blank and oxidation stability of lipids in the sample of muscle tissue is calculated according to the content of malonaldehyde in mg/kg. The new method is faster and more cost-effective while maintaining sufficient sensitivity and accuracy of the assay. It has great use in monitoring the effect of composition of animal feed on meat quality changes during storage.
