The present invention provides for a carbonated honey beverage having a composition comprising natural honey, gluconic acid or glucono-delta-lactone (GDL) and carbonated water, preferably with a preservative and an antifoaming agent. Optionally, sugar can be added to the composition. The composition preserves the flavor and sweetness of natural honey while maintaining a long shelf life.
