The process comprises introducing a product in a package (10), partially closing the package by preserving an area of pressure control on a surface of the package, heating the product by microwave in partially closed package at 95[deg] C, and completely closing the package at area of pressure control while the temperature of the product is 60-120[deg] C with a light overpressure in the package. The precooking of the product causes a release of steam by the content of the package that causes an overpressure inside the package. The total closure of the package is carried out within 5 seconds after the step of heating of the product. The control area of pressure on the surface of the package is constituted by a chimney for degassing. The overpressure in the package for complete closing is equal to 0.4 bar. An additional aqueous liquid (18) present at a rate of 1-2 ml per 100 g of the product is introduced in the product of the package. The liquid comprises water and an additive. The package is a pouch made of composite or plastic material film. An independent claim is included for an installation for treating a consumable product such as a food product. |
