<P>PROBLEM TO BE SOLVED: To provide an anti-inflammatory agent and/or anti-inflammatory food and drink which acts on inflammatory cytokines, inflammatory enzymes, and anti-inflammatory cytokines. <P>SOLUTION: On examining the action of various substances on inflammatory cytokines, inflammatory enzymes, and anti-inflammatory cytokines, it has been found that a hydrolyzate of the albumen has excellent inhibition of the production of inflammatory cytokines and inflammatory enzymes and inhibition of reduction in the production of anti-inflammatory cytokines.
