摘要 <p>The present invention relates to an antibody of thermally stable polyclonal protein in animal fat, formed by the following steps: mixing fat of each of pork, beef and chicken meat with 0.5 M sodium chloride at a weight ratio of 1:2; reacting the fat of each of the pork, the beef and the chicken meat mixed with the sodium chloride in boiled water for 15 minutes; extracting protein from the pork, the beef and the chicken meat having been reacted in the boiled water; dialyzing the extracted protein in a phosphate buffer and injecting the protein into a mouse; and forming the antibody in the mouse with respect to the injected protein, and to a method for using an antibody of thermally stable polyclonal antibody in animal fat formed in a mouse, as a method for diagnosing whether meat and fat are mixed or not. The present invention may make the antibody using the thermally stable polyclonal protein contained in the animal fat to effectively analyze intentionally non-denoted processed livestock products and foods.</p>
