PROBLEM TO BE SOLVED: To provide a modified protein having improved structure stability and a method of producing the same.SOLUTION: This invention provides a modified protein in which at least one amino acid constituting the protein is substituted by an amino acid derivative different from the amino acid. The substitution by the amino acid derivative fills a gap inside or on the surface of the protein, to improve the structure stability.
