Described is a method and the apparatus for making bread comprising the steps of mixing the ingredients, breaking the dough according to the desired size, inserting the pieces of dough (1) into a proofing chamber (2), fermentation, inserting the fermented pieces (10) in an oven (5) and baking, wherein, after the breaking step, each piece of dough (1) is introduced into a respective fermenting bowl (3) designed to favour the development of the fermentation and the increase in volume upwards of the piece and, after the fermentation step and before the step for inserting in the oven, each fermented piece (10) is transferred into a further respective baking tray or mould (4) overturned with respect to the position which it had in the fermentation step; the baking tray or mould (4) which receives the fermented piece (10) being hot. |
