The present invention relates to a method for producing a black ginseng having enhanced saponin content, a black ginseng having enhanced saponin content produced by the method, and a processed food containing the black ginseng having enhanced Saponin content. The method for producing the black ginseng comprises the following steps: (a) naturally drying a washed ginseng under sun, then exposing to night dew; (b) steaming and aging the dried ginseng in the step (a), naturally drying under sun, and exposing to night dew; (c) naturally drying under sun after steaming and aging the dried ginseng in the step (b); and (d) aging the naturally dried ginseng in the step (c) in a red clay room. |
