The present invention relates to a mustard sauce composition containing a bitter melon, which is prepared by blending 5-20 parts by weight of a bitter melon mixture into a 100 parts by weight of the mustard sauce, wherein the bitter melon mixture includes bitter melon powder, pine needle powder, and onion powder. The sauce composition comprised by the ingredients has excellent appearance, scent, taste, and texture, and contains keratin and vitamin C, thereby exhibiting an antibacterial and antioxidant activity and possessing properties of reducing cholesterol, boosting immune system, and regulating blood glucose. |
